Chorizo, Feta and Peppadew Omelette
There's so much going on in this spicy, meaty omelette that it would make an excellent quick dinner.

Recipe Ingredients
- 3 SPAR eggs
- 1 large SPAR Freshline baby marrow, finely grated
- 1 Tbsp finely chopped SPAR Freshline onion
- Salt and milled pepper
- 1 Tbsp SPAR butter
- 4 peppadews, chopped
- 6 slices SPAR feta
- 1/2 link SPAR Griller Chorizo, sliced and quickly fried in a hot pan
Recipe Method
- Mix the eggs well then add the baby marrow, onion, salt and pepper.
- Heat a medium non-stick pan with butter and then add the egg mixture. Using a spatula, carefully pull the sides that have started cooking to the middle and let more raw egg run into those spaces.
- Cook the omelette to your liking.
- Fill with peppadews, feta and chorizo.
