Chia Berry Jam Oat Bars
Crumbly bars with a fresh berry jam centre. Perfect for a quick breakfast or mid-morning snack.

Recipe Ingredients
- 1 cup SPAR rolled oats
- 1 cup SPAR whole wheat flour
- ½ tsp baking soda
- ½ tsp salt
- ½ cup SPAR brown sugar
- ½ cup SPAR butter
- ¼ cup SPAR maple flavoured syrup or SPAR honey
- 1 tsp vanilla paste
For the chia seed jam
- 1½ cups frozen SPAR mixed berries
- 2 Tbsp SPAR honey or sugar
- 2 Tbsp chia seeds
Recipe Method
For the jam
- Let the berries defrost and soften slightly then puree them in a blender or food processor.
- Stir in the honey and chia seeds.
- Place in the refrigerator.
For the oat bars
- Preheat the oven to 180°C.
- Combine the oats, whole wheat flour, baking soda, salt and sugar.
- Rub the butter into the dry mixture. Then add the honey or syrup and vanilla paste to bring the dough together.
- Keep aside about ½ cup of crumble.
- Press the rest of the dough into the bottom of a 20cm x 20cm baking dish, that is lined with parchment paper.
- Spread the chia berry jam on top of the cookie layer and crumble the reserved cup oat mixture in small bits on top.
- Pop the bars in the oven and bake for approximately 30 minutes.
- When they are golden and done, let the bars cool for at least 30 minutes before gently removing them from the pan.
- Slice into 16 bars and serve.
