Butternut Wedges with Rocket and Goat Cheese

- 2 SPAR Freshline butternuts, cut into wedges and seeds removed
- SPAR olive oil, to drizzle
- Salt and black pepper, to taste
- Dried chilli flakes, to taste
- 200g SPAR Freshline rocket leaves
- 100g goat cheese

- Edible flowers
Recipe Method
- Preheat the oven to 200°C.
- Place the butternut wedges in a roasting dish, drizzle with olive oil, and season well to taste with salt, pepper, and chilli flakes. Roast in the preheated oven until tender and golden, about 45 minutes.
- Serve the wedges topped with fresh rocket leaves and chunks of goats cheese.
