Apple, Fig and Grape Glazed Gammon
Gammon cooked in a spiced apple juice and finished with an apple, grape and fig glaze.

Recipe Ingredients
- SPAR Tender & Tasty Gammon (Uncooked Boneless)
- 1 Freshline onion, quartered
- 1 litre of SPAR apple juice
- 1 star anise
- 3 cloves
- 1 stick of cinnamon
- 1 bay leaf
Glaze
- ½ cup (125ml) appletizer
- 1 cup of SPAR fig jam
- ½ punnet (500g) Freshline red grapes
- 2 Tbsp (15ml) brandy (optional)
- Juice of 1 lemon
Sides
- 2 x 600g packets of Freshline seasonal roast vegetables
- seasoning
- 2 Tbsp (15ml) SPAR olive oil
- 15g sage
- To serve - fresh figs (optional)
Recipe Method
- Place the gammon in a large pot with the onion, apple juice and spices. Top up with water until submerged and bring to the boil
- Reduce the heat to a simmer and cook according to the packaging’s instructions.
- In the meantime, put all the glaze ingredients into a saucepan and bring to the boil. Reduce until sticky.
- Season the vegetables and toss with olive oil and sage and roast 35 – 40 minutes.
- Remove the gammon from the liquid and place on a baking tray. Cut off the string and peel off the top layer of skin. Score the fat with a sharp knife and brush half the glaze over. Roast at 200º C for 20 minutes, basting frequently with the rest of the glaze. Add the figs, if using, in the last 5 minutes of cooking.
- Carve and serve with the roast vegetables.
