Berry Blaze
Wow your guests with a flaming berry dessert soaked in cinnamon and brandy.

Recipe Ingredients
- 1 punnet SPAR Freshline strawberries, hulled and sliced
- 1 punnet blue berries or raspberries, rinsed
- 1 punnet or 410 g can gooseberries, rinsed
- 50 ml honey
- 2 ml vanilla essence
- 1 cinnamon stick
- 75 ml brandy
Recipe Method
- Combine honey, essence and cinnamon stick in a SPAR Good Living 20cm frying pan, and gently heat until liquid and bubbling.
- Add the berries and poach gently for 5-8 minutes over steady heat, shaking the pan occasionally to keep the cooking even. Remove the cinnamon stick.
- Warm the brandy in a jug in a microwave oven (+-15 seconds) and ignite with a match and immediately pour onto the hot dessert as it flames. Baste the food with the flaming juices until the flames die - serve at once.
Hints And Tips
- Stand back when flaming. Never pour alcohol straight from the bottle onto a very hot food as the alcohol in the bottle can catch fire.
- Do not substitute brandy with wine as it will not burn due to the lower alcohol content.
- The cooked berries may be poured into SPAR Freshline meringue cases. Serve immediately.
- When berries are out-of-season, SPAR canned peach slices are a successful substitute.
